Restaurant Las Águilas began its journey in 2019, when Jaime Merchan and Melva Pando opened their first location in Port Chester, NY. From the very beginning, their dream was more than just owning a restaurant — it was about creating a space where Ecuadorian flavors, culture, and hospitality could come together to make every guest feel at home.In 2022, with the support of the community and the growing love for their traditional dishes, Las Águilas proudly relocated to Spring Valley, NY.
