In 1995, Melva Pando, her husband Jaime Merchan, and their family emigrated to the United States in pursuit of a dream. With unwavering determination and tireless effort, they opened their first restaurant in New York. The overwhelming success of their authentic Ecuadorian flavors inspired them to continue building on that vision. In 2019, they opened Las Águilas in Port Chester, NY, and in 2022 proudly relocated to Spring Valley, NY, where they now serve the most delicious traditional Ecuadorian dishes. Every meal is prepared with meticulous care, preserving the exquisite flavors of Ecuador's culinary heritage. The exceptional seasoning and quality of our food — especially our daily lunch specials, made fresh with dedication — have made Restaurant Las Águilas a favorite not only among Ecuadorians but also the broader Spring Valley community.
